What does it mean to be green?

It means eating beetroot.

Having recently won some beetroot in Sainsbury's "spend ten pounds and maybe you'll win some fruit or vegetables" thing, I've been trying to think of something to do with it. I'd initially thought of trying to make borscht, but seeing as the recipe on that site includes celeriac as well (another of my much-loathed vegetables) I'm not so sure any more. The other thing I thought might be nice was something with oats, but I can't work out what. What do you normally do with your beetroot?

I apologise for the poor quality of the beetroot website I linked to. It was the first thing that came up and the motto seemed appropriate. Probably there are better ones.

Shortly, when I've got time, I'll post a few of my favourite recipes.
